Wolfgang Puck: 'Waiters make $120,000 a year but I can't find them'

“People get paid really well,” Puck said. “Still, it's difficult to find people to work. At Chinois in Santa Monica it's the same thing. I cannot open for lunchtime. Or even at Spago in Beverly Hills, you know, where people, waiters, make $120,000 a year. But I cannot find them.”

Millions of workers who left the industry during the pandemic haven’t come back for a myriad of reasons including concerns about safety. Republicans blame the labor crunch on the Biden administration’s move to boost supplemental federal unemployment benefits. Business groups, including the U.S. Chamber of Commerce, say the extra unemployment insurance is discouraging some employees from returning to work.

Puck, who's net worth is estimated at $90 million, points to issues around immigration as part of the reason why he can’t find skilled workers.
“I think the government really should loosen up and have cooks come, if it's from France or Italy or from South America or wherever, so we can get the workforce up to par. If they are professional, why not get jobs? And then they pay taxes, and everything will get better,” said Puck.

Puck said varying COVID-19 restrictions and the pace of the virus in certain geographies has made for an uneven return to business.
His restaurant CUT in Bahrain, for example, has been unable to reopen because the small island nation has seen a recent surge in coronavirus cases to record levels.
But, his restaurants in Las Vegas just had a record month now that COVID-related restrictions in Nevada have been lifted.
Puck, who also has his eponymous line of cookware, wine, coffee and cookbooks, is considering opening “ghost kitchens” for some of his locations to handle takeout and delivery services, something he says his current fine dining restaurants are not equipped to handle.
“Takeout is not our main business,” he stressed. “Our main business is keeping the customer, making the customer happy in our restaurant, make them feel good, give them great food and great service.”

There’s a disconnect in this story. Unemployment benefits even with the government’s supplements don’t pay $120k/year. Either he’s exaggerating the kind of money his employees make, or there’s a different reason why he’s unable to find workers.

I remember when it was cool to own your own bidness and work a part time to keep it all a float. I worked 2 or 3 jobs in the early 80's.

The government doesn’t have to match the number. They just have to pay barely enough to make the loss of wages worth the welfare l.
Would you rather work your arse off every night and weekends for 120,000 or sit on your arse 24/7 for 50,000? American resoundingly answered this question with greed, sloth, and apathy. Our society is dead. We’re a gas filled bloated corpse waiting to explode.

These aren’t the type of people thinking about using the difference to plan for the future. These are the type that think since the difference won’t buy them the car celebrity X on Instagram just got what’s the point.

120K per year is much more than unemployment benefits. Hell I'd work for that. I refuse to believe he can't fill jobs if they truly made that salary.

I guess I'm supposed to pull out my violin and play a tune for the guy paying waiters $120k (I understand it includes tips, thanks) who can't get people to come to work? The solution is obvious. The market is changed. Pay more. I don't know why we keep having to hear these sob stories.
Alternatively, we could maybe stop dumping billions on the market, a plan I'm sure Mr. Puck was for by vote, if not actually in truth.

But you see, universal basic income will totally work. This isn't a good example. You see, when people get money for nothing, they will totally choose to work, because they want to. And, not only that, they'll choose to do work that is hard, like waiting tables. The logic is there. Somewhere.
Just in the past couple weeks.
Florida: (local seafood joints)
Restaurant closed at dinner time, they couldn't handle the crowd.
Restaurant didn't open, they couldn't staff up.
Restaurant ALSO closed at dinner time, reopened doors at 8pm.
Georgia:
Restaurant closed (Chilis) and only took takeout.
Restaurant (Longhorn) had 4 waitstaff show up for Father's Day weekend, couldn't get anyone to come in. One guy got arrested while we were there, so three. The manager was waiting tables.
Took dad to iHop, they had 2 waiters working the entire place, they were also calling begging people to come in. When we left, there were people lined out the door... zero chance they were going to serve those folks.
Just in the past couple weeks.

Good friend works 4 nights each week as a bartender at a high end hotel in NOLA and makes this kind of money. They can’t find bartenders. It’s crazy. Said he is pulling in $700 night in tips.

I really feel bad for the CofC though. They were mad at Trump for slowing down border flow to 50%, so they made a deal with hardened commies who jail their pol opposition, to steal an election. Now things are worse than ever for them.
