Btw, IF you notice, ALL NASA's supposed "photos" aren't; they are "IMAGES" -- "composite" at that. If you need proof o my claim, check it out yourself.

Simply because Polaris is beyond the sight line / horizon of those in NZ (same of N. Hemisphere who cannot see the Southern Cross.

For the same reason that the horizon is only about 3 miles away. Your eyesight isn't unlimited. There comes a point at distance when you can cease to see based on your vantage point. The theory is that Polaris is closer to the vantage point in the Northern Hemisphere than the Southern. And There is still the atmosphere through which light dissipates as well.
Now a question for you.
Is the earth a sphere or pear-shaped?

I can see the moon and sun in the same daytime sky somewhat frequently. Fairly close together

The idea is that the moon is not Terra firma, but merely a night light. It isn't reflected light, but emits its on light that just so happens to be vastly different than sunlight as it were.

(And so does the reality that the Moon's "Light" is NOT "reflected" from the Sun, but it is it's own source. As you likely know / suspect, "Plasma" is that theory.)

How does a star drop below the sight line across a flat plane???? You can use a telescope. Polaris is right above the North Pole.. which would be center of your flat earth.
Soo if it’s center of the flat earth. Why can you not observe it from one side of the flat earth.. and not the other? It’s a flat plane. The line of sight is the same.
