In an age where nearly literally every human on earth - BILLIONS OF THEM - has an HD video recording device in their pocket, how has it come to pass that we haven't seen a massive proliferation in evidentiary videos over the past 2 decades? Instead, we're still stuck with grainy nonsense from the 50s.

Because they don't want to be seen. There is 1000% more evidence this is a real thing than not.

You are driving. Some strange shite appears in the sky. You grab your phone, trying to be mindful of other drivers who are surprised and slowing down and split your attention 3 ways between the object, traffic, and tapping the damn camera icon properly instead of touching and dragging accidentally. If you’re lucky you’ll get a brief bouncy video.
And if you’re walking, the camera will usually only pick up a bright ball or spot in the sky. Pics could be blurred because of extreme zooming.
Orbs are routinely photographed and recorded. Chris Bledsoe can pretty much call them at will. There are many photographs out there, but the real trick is to weed out the fakes.

Coulthart and others (Mellon, Elizondo) have stated that we have crystal clear images and videos that would leave no doubt (that are “classified”).
Again though, whatever the phenomenon is, it:
-does not want to make itself overtly known
-likely alters human perception
-is increasingly being detected due to new sensor systems
