I agree with you. Robin Williams said many times that he considered Jonathan Winters to have been his mentor. Not that it was necessarily his funniest "stuff," but Winters did some bits with Dean Martin on Dean's old show that are pretty funny. A couple of them are on YouTube.
Dean Martin was also a very funny man who didn't need a script. But Dean could do almost everything, so he wasn't primarily considered to be a comedian. He was naturally much funnier than his old partner Jerry Lewis, but the people of the 1950's wrongly considered Jerry to be the more talented performer. I'm sure most of them discovered later that Dean was, by far, the more talented of the duo. Even in the realm of comedy.

He also battled depression and used comedy to mask his symptoms.

Dean was multi-talented and maybe tGOAT straight man, but he was not a greated comedian than Jerry.

I simply disagree with you. Two things:
1) When it came to comedy, Jerry Lewis was what I would call a one-trick pony. His "shtick" was playing the clown, the buffoon, the fool. The problem with that kind of comedy is that it doesn't age well. Jerry never really transitioned into anything else, and as he got older his career declined. Steve Martin started out much like Jerry, both with his stand-up (arrow thru the head) and first movie or two ("The Jerk"). But unlike Jerry, Steve Martin transitioned into other things as he aged. Romantic comedies, for example.
2) Here's a 25-minute clip of The Tonight Show circa 1968. Johnny Carson was still doing his show in New York, but he would go to LA twice a year because that's where most of the stars were.
In this clip, Dean Martin walks on as a surprise guest. Imo, this clip shows how quick-witted Dean was. He was simply a naturally funny man in a way that Jerry Lewis wasn't.
Bob Hope is also in this clip. A couple of times his quips fell flat, and you can tell that it bothered him. Without scripted jokes, Bob Hope wasn't nearly as funny as Dean Martin, either.
A guy named George Gobel ad libs a couple of great lines in this too. Worth a watch, imo (I think Dean was actually a little tipsy here. I don't think he was pretending).

in fact, several (terrible) movies are built around him playing multiple characters: Family Jewels, Three On a Couch, etc... Indeed the whole point of The Nutty Professor is his playing more than one character.

FWIW Gobel was a major star in the '50s and had his own variety show. James Dean even imitates him in Rebel Without A Cause
