I think the key may lie with the student's advisor, as in, what do you plan to do when you graduate? I think a lot of students would be well served to get a second degree in education or physical therapy or something, were they can at least put food on the table if their grand or ill defined plans don't work out.

Just read an article that Syracuse is cutting 84 majors, mostly in the arts and humanities.
This is going to be a wave. Enrollment in those programs has been declining as few students want to spend 6 figures for a degree that employers don't care about.
I don't necessarily think this is a good thing, but I understand it.
