Eminent domain allows the government to acquire land for public use. A pipeline is not public use because it is privately owned.
That said, are you aware of the Kelo vs New London case? It was similar in that the town of New London was trying to seize property from local residents to give to a company that planned some real estate development. The Supreme court ruled against the property owners, in favor of the government because the real estate development would increase tax revenue or some other nonsense.
If you think that was the correct decision, understand that the conservative justices dissented. It was the liberal justices who voted in favor of the government and against the property rights of citizens.

Private utilities condemn land all the time in Texas.

That's not surprising. Texas is arguably the most crony-capitalist state in the nation. Just one example: Texas won't let Tesla sell in-state because dealerships oppose Tesla and Texas legislators are in the pocket of the dealerships.
