Beer Can Chicken and veggies (with pics)

Decided to do this because it is a family favorite. I like Thomas Keller's recipe, but my family has their own favorites.
I did two different chickens, but first, I brined them.
My dog watched me - waiting for a mistake to hit the floor. Didn't happen.
Pulled 'em out and let them dry.
Chicken 1:
kosher salt 1T
sugar 1t
ground nutmeg 1/4t
ground cinnamon 1/4t
ground cloves 1/4t
olive oil drizzled over chicken
I used as much salt as the rest of the ingredients combined.
Chicken 2
fresh thyme, sage, and rosemary chopped and added to soft butter
Lemon juice
kosher salt
cracked black pepper
all to taste.
I threw them on the fire at about 350-375 degrees indirect heat - with a little smoke.
The smoke - hickory chunks.
Halfway there. I switched them right after the pick.
I prepared some veggies to grill - bell peppers, onions, and squash.
Chickens are done and resting.
Veggies are cooking.
Dinner - Chicken 1

Other than zucchini, all other squash literally makes me gag.

How much of the beer actually gets cooked out of the can and into the bird?
When I've done, there was a full beer stuffed in a very moist chicken.

I poor about half of that swill out before I put the chicken on. Mainly because you don't need more than that, and with a full can I will spill it all over everything on the way to the grill.
Really doesn't matter what kind of beer you use, I used Bud Light, because it was 89 cents at the local convenience store.
For the record, I drank a Don-de-Dieu triple wheat with dinner...

I'm kinda that way, too. One thing I know is that I need to have it well seasoned. This time, I put kosher salt, cracked black pepper, EVOO, and a little balsamic vinegar.
It was very good. I wish I had added some mushrooms, though.

I had my beer in hand, already. With beer can chicken, I could have used just about any beverage in a 12 oz can, and it wouldn't have made a difference...

For the record, the kids LOVE the chicken, but the veggies are just ok.
The dog loved both when we broke down and gave her some...

Pour out beer. Fill can halfway with a decent white. Drink rest of bottle while cooking.
This sounds like something that wouldn't suck.

I have to plan in advance to post the pics. Some of the best looking stuff doesn't ever get posted. I tell myself afterwards, I shoulda taken pictures and posted them...
I've been fortunate not to screw up to badly when I've decided to take the step-by-step pictures. I've never actually not posted something because it didn't turn out.
