Easy and delicious. Whole duck plucked. Season, put onion , sausage , orange slices all inside duck. Place in a pan with some water and orange juice. Cover and cook in oven at 250 for a few hours. When you can seperate breast meat with a fork its done. Delicious every time. My kids all love wood ducks.

My favorite way to cook wild ducks is in a gumbo.
Boil the birds in water until all that "film" comes off of them. This kills some of that "gamey" taste. Then rinse them in the sink, season them with some Slap ya Mama, then toss em in the gumbo.

I do em in gumbo, but different. I cube em and brown the hell out of em in the drippings from the sausage. Then build it up from there using the gratin. Makes a damn rich gumbo.

I kill enough ducks for gumbo about every three years, so you may have to hang on a minute!

Do this a lot. Little italian and dusting of Cavender's and grill rare. So good.
My favorite with whole ducks is in a pot with sausage, onion & apple for a couple hours.

I'll grill goose breast (snows and blues) on the pit after marinating them. Its one of my favorite things to grill. But I clean a speck whole and bake that in the oven, stuffed to the gills with veggies and sausage.

I tried picking some teal from Sunday. OMG the pin feathers. The only ones that were even close to presentable were the two mature looking greenwings.

Drain a can of pineapple chunks or rings into a bowl
Marinate breasts in pineapple juice, salt/pepper, hot sauce, cavender's mixture for a few hours
Heat some oil in cast iron skillet
Sautee breasts to rare/mid rare remove
Dump marinade in skillet and scrape pan to incorporate meaty bits, reduce to about half
Add pineapple chunks/rings (cut rings in half) cook 2-3 min
Slice breasts and put back in pan for 1-2 minutes
Serve with toothpicks

Dang this sounds good. May try this out and incorporate some red chili flake for some heat then serve over rice. Kind of like a Chinese sticky rice sort of dish.
