There’s 2. I fish 1 of them every year. Headquarters camp is on the river by the bridge in Simmesport. We came in 1st last year with about 460lbs on 100 hooks. Ran 3 times. Good year

I’m usually around. I thought Vidrine usually won that thing

Y’all always seem to have a blast. Don’t recognize you from your picture though.

I believe G Vidrine always wins the other tournament. That’s the Mamou/Vidrine area tournament.
I fish with 2 Deville’s. Our tournament is more Ville Platte people

I'll eat catfish from restaurants sometimes (farm raised channels, I guess), but I don't ever keep them anymore when I'm fishing. I keep crappie in the freezer at all times. I don't see me ever pulling out a bag of catfish over a bag of crappie.

But, back in the day, I guess I'd say small blues were my favorite to eat. But, I don't recall ever eating many flatheads. I hear they're the best eating though.

After I filet the sides, I'll cut the belly meat off starting at the back of the jaw of the cat on the underside and arc out to the sides where the ribs are and cut just shy of the ends of the rib bones. Then proceed to cut past the double fins on the mid section of the belly.

Then I put the outer skin side down on my cutting board, make a cut down to the skin right in front of the belly fins and filet the skin off. Then I turn the belly slab over and filet off the interior silver belly skin and what you wind up with is a nice slab of delicious meat.
^^^ THIS ^^^

Once the flattys hit about 20 pounds, the size of the belly slab is beyond perfect. And the bigger the fish, the better.

After the skin and abdominal lining are cut off, I cut the belly slab lengthwise into strips kinda like fish fingers, then batter and fry. The kids know the appearance of those particular cuts and usually vacuum them up before I even get a piece.

But in general, all the flathead meat is terrific as long as you fillet off any fat and dark meat contamination deposits. You get a piece of that meat and you'll never eat fish again.

I agree with you but man, some catfish cooked in a black pot, over a fire once and a while- shazam.

I like most types of fish fried, including sac-au-lait. But I actually prefer fried catfish as I find it has a little more body. More flavor. Love me some cats!!
