No sign of GJ and so far nothing appears to be messed with. I still have a few things to check when I get out of the stand. As far as WHD.........

I'd set up a camera along the highway where you saw the truck stop where your best guess would be they are entering your property. Make sure camera in a hidden location but can get a pic of the truck or whatever. Long shot but worth a shot if you can get a picture of the criminal in action.

I would recommend that you turn the flash OFF. The guy is probably coming in the daytime. No reason to tip him off with a flash or an IR emitter glowing red.

IR,,, cable lock on the cameras. You need bolt cutters to get my camera or its memory card.
They make cameras that are actually phones rigged up to email you the pictures as soon as they are taken.
Oh and I have read that it is actually legal to shoot a deer on your neighbors property but it would be trespassing to retrieve it.
