Proper way to freeze fish?

I once tried to do that with deer meat. My dad threw it out so not sure how it would have thawed

On the rare occasion that I have fish to freeze I use water and a shot a lemon juice.

Keeps longer in water, and if you plan on taking a trip somewhere with it, or giving it away to relatives out of town (as I often do), it will stay frozen for the ride/flight.

I've heard of people soaking deer and such in milk to remove the "gamy" taste. Maybe he'd thinking the same with fish.
