Wondering if in our high humidity environment if the pellets left in the tank get funky?
Do they get hot enough to grill?
Do they last?

Get the campchef woodwind. It has a lever that allows you to empty the hooper

Been having a Green Mountain pellet for 2 years now. It always has pellets in the hopper but it sleeps in my shed. It isn't out in the weather. Mine definitely gets hot enough to "grill" but there's heat deflector plates to allow the heat to be dispersed evenly throughout the pit. So technically it's not really grilling but more indirect cooking.

A friend of mine has a Rec Tech and lives in Seattle. They get alot of rain. He loves his and hasn't mentioned any issues with humidity.

You are way overthinking this, cigars are stored at 70% RH and they seem to burn just fine.
Never had any issue with pellets and humidity.

I bought a Camp Chef Woodwind a little less than a month ago. I’ve cooked several times on it and have always left the pellets in the hopper. No issues with them not burning well or the pit keeping temperature. Oh, and this is including the fact that it has rained EVERY SINGLE DAY since I have had this pit.
As far as the grill, I was worried that it wouldn’t be worth the price tag. However, I’ve been nothing but completely impressed with it’s ability to not only smoke, but to get hot enough to “grill”. Last Saturday, I cooked for 18 hours (the grill was turned off for less than an hour during that time). I started at 11:00pm Friday with a 9lb (trimmed) brisket. When that was done the next morning, I cooked ribs and then chicken wings after that. All low and slow, and the results were amazing. After I smoked the wings for a little while, I turned the grill up to “Hi” and got a nice char and crispy skin to them. And this is without having a direct flame on them.

I own a traeger and live in the rainy parts of the NW.
We do not have the humidity that Louisiana has. It's damp in the winter (different kind of wet) but it hasn't been close to an issue with my pellets.
