Nitrate-free deer processing

Anybody know a place in SE LA that can process deer and make sausage that is free from nitrates amd preservatives? Asking for a friend.

If you're having fresh sausage made their probably won't be any nitrates used. I think nitrate free smoked sausages and bacon use celery powder to cure which has a lot of natural nitrates in it. IDK why they are able to get away with saying nitrate free.

I agree but I’m dealing with some potential allergies plus cancer concerns. Whether these are justified I can’t say....
From the Mayo Clinic: “Sodium nitrate, a preservative that's used in some processed meats, such as bacon, jerky and luncheon meats, could increase your heart disease risk. It's thought that sodium nitrate may damage your blood vessels, making your arteries more likely to harden and narrow, leading to heart disease. narrow, leading to heart disease.”

Our family has always done a lot of home curing of bacon, hams, sausage, poultry, etc with nitate and have eaten literally tons of it. Our average age at death is 94 years old and is isn't from nitrates. I still have ten years to go and am looking for the right bed to get shot in.

Love it! As I said, just dealing with some allergy issues and also a bit of concern by some who eat nitrate and preservative free. Thank you fir the response!

Nothing wrong with not wanting to eat nitrates and other non-natural chemicals. I process my own for that reason. And I don't know how the meat is handled at a shop.

Not that I know of. All that I know use curing salt. As was said, you could make fresh sausage without it pretty easily, and have that smoked and just treat it as fresh when you cook it maybe?

The only time they would need to use nitrites is if and when the smoke the sausage. Call them and ask if they can do what you need. If you need sausage ask them to make all fresh sausage.

It would be a lot more awesome if I had just hit that damned steer in the road as I came over the hill instead of trying to to dodge it. I hit a ditch with a wash-out and flipped the pickup end over end landing flat on the wheels and crushing my back in the process. I recovered fairly well over time, but as 75 came along and arthritis started working on me I lost the ability to enjoy the outdoors as I once did. Now I enjoy it vicariously through you fellows and a few favorite you-tube channels.
There are other blessings though, we got to meet our tenth great grandchild last Sunday when the proud parents brought him to meet us.
