Making deer burritos today

One of you baws on the food board inspired me a few weeks ago and finally got around to making some burritos. They came out pretty damn good. Still plugging through making them and vacuum sealing. Here’s a few pics of the process

What is the yellow stuff on the tortilla?

Absolutely.

6lbs deer meat mixed with beef fat
2 onions
2 bell peppers
2 poblanos
2 cans of nacho cheese
32 oz of refried beans
6 taco seasoning packs
Shredded Mexican cheese
Flour tortillas

Chop the onions and peppers and sauté with a little oil and garlic powder, onion powder, and chili powder.
Brown your ground meat and drain if necessary.
Mix the peppers and onions in with the ground meat.
Add in 4 cups of water and the taco seasoning. Simmer it down until it thickens up. Can add corn starch slurry if needed.
Mix in shredded cheese and refried beans.
Let the meat mixture cool down to room temp.
Take your tortilla and put a line of nacho cheese, then your meat, and top with some shredded cheese.
Roll into burrito and spray with olive oil and air fry for a few minutes each side.

ETA: This should be enough to make ~50 burritos with the fajita sized tortillas.

Is this to eat them? Or do u do this if you are vaccuum sealing?

Nice job. We started doing them a few years ago. They are easy to make and a heck of a lot cheaper than having them done at a processor.

I air fried them before vacuum sealing. Not sure if necessary or not but it gave them a nice little crunch. I’m thinking if I wrap in paper towel when I microwave they should still have a little crunch when I reheat them.

We did several singles when we packaged ours . The kids love taking them for lunch at school.

So are you vac sealing and freezing them after you air fry them?
I have a want to make a big batch, but need to be more sure about the freezing/storage part.

Yep exactly. Then just pop them out the freezer and microwave or air fry again to reheat.
