looking for a breakfast sausage recipe

Got me a deer the other day, would like to make some breakfast sausage. I've never done it before, anyone have any good recipes?

Leggs #47 has been my favorite. Not over powering with sage. Add some maple syrup to it as well!

Rebel country sausage seasoning. That’s a good base for a mild breakfast sausage. I made another batch recently and added Steens to it.

I see legg's maple flavored breakfast sausage on amazon, but not #47. I may try that

Looking back it’s actually #10, not sure why 47 stuck in my head. It’s not labeled as breakfast sausage but resembles it more than link sausage. I’ve used the maple flavored one as well you can’t go wrong with either.

Rebel Butcher out of Pearl MS has the best breakfast sausage seasoning IMO. I mix 30% bacon ends with 70% deer and use that Rebel Butcher breakfast blend.

Breakfast sausage is super easy to make, no real need to buy a special seasoning imo. Some grocery stores sell bacon pieces, it’s the leftover bits from cutting the bacon into nice even rectangles for packaging. Just make it 20% or so bacon. Easiest thing.
The seasoning is basically just whatever combo of sage, thyme, and rosemary you like. Then you can add maple syrup, salt pepper, and pepper flakes to your liking. Look up a recipe to get rough estimates I can’t remember what I use. But mix it all up and then cook a small patty and try it.
I usually make 20 lbs or more at a time, very easy and easy thing to give away too to others. I usually do half maple and half with a lot of pepper flakes and some cayenne so it’s got some spice.

So i bought 3 lbs of bacon ends to mix with about 7 lbs of deer meat and a 16 oz jar of steens cane syrup. About how much steens did you add to yours?
Also is it a bad idea to smoke it? or should i just leave it fresh?

Fresh and smoked are two totally different animals. If you want breakfast patty sausage all you do is grind, season , patty and freeze.
Smoked sausage is cased and should be cured prior to smoking.
For breakfast patty I’d add your weighed out seasoning and 1/4 cup of steens for every 10 lbs of meat. Try that and go from there since steens is fairly potent.
I shape them into the size I want and freeze individually on freezer paper overnight. Then you can pull them and throw them in a ziplock.

Walmart sells some called bits and pieces. Its good quality stuff and like 3 pounds for $8. My jewish side has me picking through and getting the good chunks of meat out for eating like regular bacon though. I'm usually impressed at how much good meat there is.
