I have kept bass up to 5 lbs occasionally to grill just because my FIL really enjoys them. Done on the half shell they are flaky when done right. I don't redfish much. Haven't done this in a few years though. I usually throw anything back over 3 because I enjoy catching the big girls.

ill eat anything from 1-3 pounds, actually, im sure I'd eat a 4 lber too... but i think that size i would probably throw back. I eat a ton of bass, at least once a week, kinda have an endless supply from our property in mississippi, cant catch enough of em!!
ive eaten them a thousand different ways, but usually ill just put them in a baking pan, put some lemon pepper and tonys on em and toss em in the oven til they're done.
will do the same thing on the grill in one of those foil pans. sometimes ill get wild and put some parmesan cheese on them

The biologist who helps us manage our lake tells us to keep everything under #2 and release everything over. We have elected to lower that threshold to about #1.5. That seems to work well.

At about 3# they go back. No particular reason. I can usually catch enough crappie and spotted bass or catfish to make up for the bass. Actually if I have some crappie I usually throw all bass back unless someone wants bass specifically.

I had never really thought of avoiding consuming advanced aged top predators but I don't usually keep bass to eat over 2.5 lbs.
bream, crappie any size.
hybrids, usually up to 4 lbs
catfish, usually under 5 lbs

I would say 3# but I rarely catch anything over 2#

Eight pounds, I ate a 7.5 lbr before and could hardly breathe...just too full..had some fries and pups too, though..

Male bass up to 4lbs, if I am fishing to fry fresh fish, 3 1/2 lbs. I rarely keep anything bigger than 3 lbs, hell a lot of times I throw everything back.
