I like the Krazy Cajun. But they don't carry that 8 gal pot any longer.

Call R&R Welding and get the 10 gal setup, have him put casters on the burner and get a hinged lid. I promise you will be very, very happy. I have the 15 gal setup just as previously mentioned and about to go buy a 5 gal setup. I love mine!

I also bought this set up from R&R. Although I'm no expert Jambalaya craftsman, I really enjoy cooking in it. I prefer the round bottom pots, mine came with an aluminum lid - I guess he still sells them that way.

As soon as I got it home I bought a grinding wheel and light sanding pads for my angle grinder and worked the inside over pretty well. Last step was buffing it out as best I could before seasoning it to my liking. Make sure to clean the inside very well - you'll want to make sure to remove all of the dust. The inside being so smooth makes for an easy clean-up.

BTW, all of those pots say they are already seasoned. I would recommend seasoning the pot again at least once, probably twice before using.

Why would I want a hinged lid? Do you mean that the lid hinges on itself in the middle, or the lid hinges off the pot?

Don't have one, but I think this is correct.

Useful for serving. Don't have to remove complete lid

If you're around BR, I got mine from Goodwood Hardware. They have different sizes with matching burners. Has been great for me so far.

I got the oversized burner on my 15 gal setup, I think it's just a hot water heater burner but not sure of the size or BTU but it will get things going very quickly. I also do not have a regulator on mine, just control gas with a needle valve so no worries about regulator problems.

Yes the lid is cut down the middle just offset a little and hinged. You don't have to pull the lid off and on for serviving, simply lift the hinged side and a lot more convenient. I had him also put a porcelain handle on the hinged side so people don't burn themselve opening and closing the lid during cooking and/or serving.

Those look awesome. I am in the market for one and headed to LA for a visit next month. May have to order one for pickup. I would assume the 15 gallon would be good for groups of 100?

Yes you can feed 100 or so. I use spreadsheet in the recipe link by Stadium Rat with a lot of success. The pastalaya recipe attached with it is my recipe. R&R makes them in Gramercy right around the corner from Zapp's potato chips or at least they used to make them in Grammercy. Very nice guy and easy to deal with.

I got one from rouses a few years ago. Paid like 100 fore it and it came with an aluminum lid and a burner.

Like someone already said, get a 10 and you won't have to go back and get a bigger one later. I have a 10 gallon and a 15 gallon. Sometimes if I am cooking a 15 gallon jambalaya I'll cook beans in the 10 gallon.

I found my 15 in a barn behind an uncle's house. It was half-full of mud and rat shite. After about a month of cleaning and burning it was ready to go.
