Unless it's old growth cypress, it will rot. The sap is what prevents rotting and it's not found in young (cheap) cypress. Old growth cypress for a fence will cost you out the a$$.

I used cedar and the guy said to a wait a few days and then treat it w/ Thompson's.

That will keep it looking good.

We got another quote and this guy digs his posts 3 ft deep, so 36". His quote is $2k more with everything else the same other than he offers 5 year longer warranty, which to be quite honest I'm not that worried about. But the current fence which previous owners installed leans horribly and I'm told its b/c they didn't go deep enough. I'm kinda paranoid now lol. Is 3 ft overkill and is 27" fine? I don't want this thing leaning in 5 years.

New cypress will rot. No doubt. But i like the way cypress weathers a little more than cedar. Would only use it for decorative type fences.

I have cedar fence 7 years old. I did nothing to finish it. I want the weathered gray look. Just jetting there.

Are you at all mechanically inclined? If so, a fence isn't hard to do yourself. Just have to use your head, and your brain, and your mind.

That's a quote by Jack Black in his seminal work School of Rock.

I just built 380' treated pine. Set my posts at 3' (used an auger). Installed a 3' manway gate and a 12' double opening gate. Also installed an area for my mower to be locked away out of site and a fence around my pool equipment. Three 2x4 rails with 4x4 line posts and 6x6 corners. $1600 for lumber. Used deck screws all the way around. I have been waiting for temps to stay above 50 degrees here in Georgia to stain/treat it.

Pine works great if you do not touch the ground with the boards and you actually maintain it.

Fair enough. But cypress isn't a rot free wood as many people believe.

Also, I have to call bs on cypress being cheaper than cedar. 6' cedar boards run anywhere from $2.50-$3.50. I buy rough cut cypress shorts 1x6x6' for $3.50 and those need to be planed down.

Maybe not now, but when I did mine, the cypress were like $1.75 apiece, and cedar were like $2.75. Scott fence, Baton Rouge.

After a few years, I think the pine looks like shite.
