How long do you leave catfish on ice?

Went out this morning and got 14 channel cats anywhere from 2-6 pounds.
I typically crappie fish and always let them sit for a day to stiffen up before filleting.
My plan is to fillet these catfish. Do the same rules apply?

As long as the gills remain “bright” red, and not gray, you’re good. What rules are you referring to?

I dispatch them with a hammer between the eyes and immediately fillet the meat off. Then I soak the fillets in icy salt water overnight after rinsing.
Maybe just me but I've never let them sit overnight, even on ice.

If you make a good water/ice slurry fully covering the fish they will get cold and stiff real fast. No need to wait overnight.

Waiting over night will not hurt them at all.
Like said above, a good slurry will have them ready in a couple of hours.

Personally my hands get cold and numb to the point it's dangerous to operate a filet knife so I prefer to let the fish warm up a little bit if it is alot of fish.

We use to go camp and run lines for 4 or 5 days when I was a kid.. never had a problem with fish on ice for that long. Most of the time dad would gut them and put them on ice until we got home.

I use a manual fillet knife.
For so e reason I’m better with that than electric.

They’re a lot easier to skin if you filet them fresh.

Yeah, I'm still confused why he prefers to have them cold and stiff before filleting, especially with non-electric knife. Not just cats, but he specifically said crappie. That does not compute for me.

I caught a an 8 pounder Tuesday and just filleted it tonight. Turned it into some fish patties, fine eating right there.

Skin em fresh (included gutting and de-heading) then chill before you carve the meat off the bone. You’ll get a lot more meat this way.

Catfish are no more prone to spoiling than crappie. You’ll be fine for quite some time TBH.

Drives some of my friends crazy cause they can’t understand why I skin if I’m going to t
fillet. I just hate wasting meat and never got comfortable using an electric knife to take meat off the skin. In fact, most often I’ll use a regular fillet knife after skinning.

Yep. Blade is 1/2 the thickness of electric. Save meat.
