Based on the OP's second post, I would say this is one deer and nothing but sausage. He must have killed this beast in the Midwest or Canada, whic would explain a few things here. Now that I have re-read his comment about the de-boning, the price / pound of sausage has dropped to $1.96, which is a steal of a deal!

FWIW, Bergeron's has the best plate lunches around at a good price.

Seems like we pay betweek $40 and $50 and we drop the deer off skinned and gutted. However we just get the backstrap and hams sliced and the rest ground into hamburger.

140 lb? how much did your damn buck weigh live?

15% bone wieght
15% guts wieght
and 5% skin weight

total weight was 215 lb min.!

That is one big arse deer.

And that is assuming it didnt have any antler weight.

I got a doe done at Tramonte's last year and got it done in all link sausage. It was expensive, but well worth the price. It is great sausage, most people can't believe they are eating deer sausage when they taste it.

Got two does so far this year and if i find my buck, I paln on making him into summer sausage, link sausage, and spicy breakfast pan sausage.

I'm gonna get some hog made into Jalapeno and cheese brawts again this year too. Those things went as fast as the beer at the last tailgate.

they don't use just deer meat for sausage, most of the time it's 60/40 pork to deer meat. That means only a little over 50 pounds of deer meat.

Yeah, that's not really expensive. I pay a little over $2 for 60:40 deer sausage but I bring them the deboned meat and all they have to do is grind it.

guy i go to charged me around 400 for 3 deer that i deboned my self. i got half sausage and half ground meat
