Deer Processing

Since Sportmans One Stop on 61 closed, I didn't have a place to process my deer meat so I tried out Bergeron's across the river in Port Allen. WOW, let me tell you there meat is fantastic. Probably some of the best I have put in my mouth.

I will warn yall though they are awfully proud of their processing and it is costly - but damn good!!!

I got 140lbs of sausage - smoked, smoked with green onions and seasoned loose - and it cost $340. This included $65 for deboning.

$2.42 a pound for link sausage is a very fair price, fwiw.

Well no duh it cost you that much. Look at the amount of sausage you got. I had a guy do about the same amount with my deer last year. Cost $100 for Jalapeno Cheese Deer Sausage. Was good, but won't be going back.

That sounds insanely high. The old man that processes our deer charges $65. We just drop the deer off. We don't have to gut it or anything. He doesn't do all that fancy sausage and what not though. With our last deer, we just got a couple pounds of sausage(not link sausage), the backstraps whole, tenderized deer steaks, and the rest ground hamburger meat.

It sounds insanely high because it is an insane amount of deer sausage!!! A lot of deer don't weigh 140 punds on the hoof, much less 140 pounds of meat. This guy had to have dropped off several deer and ordered strictly link sausage, which takes much more labor to process than tenderizing and wrapping steaks, roasts, backstrap, and such. Go anywhere you want to with 140 pounds of meat and you will pay out your arse for it to be processed.

Think of it this way, lean hamburger meat in a grocery store is over $2 a pound these days. This cat got off good only paying $2.42/ pound for link sausage.

As 4LSU2 stated this guy got off easy on the price. I get my jalapeno link sausage done for $3.25 per pound and I don't mind paying that. So if I got 140 pounds done we are talking $450. $2.42 is not bad at all.

Yeah I didn't really break it down before my post. I just saw the total and and was thrown off. I've never ordered anywhere close to that much sausage at one time before...

I never have either. The most I've got at one time is 30 lbs. 140 lbs would last me 3 years.

Was 140 lbs the amount of deer meet or the amount of total sausage. What was the ratio of pork to deer?

even if it was a 50:50 mix that still 70 lbs of deer meat. i guess he dropped it off and said he wanted nothing but sausage.
