I have always figured that most of the boats on BBC look really good in photos but would show some minor imperfections in person. I think the level of finish you are describing, while still a considerable amount of work, is about right for anyone not building to market.
Keep the posts and pics coming. I am fascinated with the process. I have meant to build a boat from BBC for years but it is a daunting undertaking....now that I am back in the civilized world where used outboards and affordable trailers are readily available I may do it yet....
I have a 2012 40 HP 4 stroke Yammy tiller that would be PERFECT for a 20' Panga….I may give it a go. I have been offshore in 20-26 foot Pangas with 25-75s on them and they are fishing machines....not the most comfortable ride but given the efficiency they are pretty sweet...

I’ve always wanted to design and build my own skiff and my long term goal is to start up my own fiberglass boat company. I have a Master’s in Naval Architecture and deal mostly with work boats but I want to start diving into smaller skiffs on the side. I definitely believe I can save a lot of money vs buying a Hell’s Bay for $50k+ and have an equal, or better, skiff.
If you read the forums on BBC everyone seems to agree that they spent more on the hull than a comparable factory hull would cost....I don't see how it's be possible, with of course the exception of labor. The "sweat" equity would be paid for by having a hull that serves your purpose instead of your purposes serving a hull...and the enjoyment and satisfaction of knowing you have built the hull. I have restored a bunch of boats over the years, from jon boats to offshore boats, and it is FAR cheaper than buying new and when done the hull is what I wanted....not what the factory could mass market. I still lean toward that being a more cost effective method of obtaining a serviceable hull but it isn't as satisfying, on the surface anyway, as doing it from the ground up...

Riverside lumber in NOLA. Great service and they knocked off 20-30 dollars off the final price since I paid in cash.

Had gotten into canoe racing on the national level, so there was a dedicated group that freely bounced ideas off each other as well as how-to. So I've seen many (old guy here) and even those with less than stellar results get a certain satisfaction that can't be bought. Of course there was that one time at the dump, where this guy got off his front end loader (before forever hiding my labors), and said I bet there's a good story here.

Have you finished it? The topic was brought up yesterday about building pirogues and I linked this thread.
