Preach brother. I’ve been wanting to start this thread for awhile. There’s no character or distinctions anymore amongst these restaurants.
And why bother? Most of the business comes from people who don’t eat there. It’s a reflection of society and it’s about money. It’s a lot easier to mass produce cheap shite than it is to do so with something that is aesthetically pleasing. And who cares anyway? Most customers never leave their cars.
We saw similar trends with respect to govt buildings after the war, schools during the baby boom, etc.
I also hate the current trend of shipping container looking condos. Huntsville has them popping up everywhere. In the middle of a 1930s bungalow neighborhood is a massive shipping container looking apartment complex that looks like arse.

Brutalist. Not even once.
This is the answer. Look at county courthouses in the south that were built between the CW and WW2, many are grand stately buildings that have lasted over 100 years. Those buildings were nice, even though built in poor communities.

1) People want quick and cheap
2) That leads to easily repeatable designs

It’s a combination of several factors. Code and zoning regs play a big role (especially in multi-family), and then if you tell an owner or investor that they can build a pretty building for $10m or a an ugly one with the same functionality for $7m, they are choosing the cheaper option every time.
Buildings are basically functioning businesses in themselves, and the vast majority are financed based on their cost and expected cash flow. Like any other product on the market, producers are trying to optimally balance cost and cash flow. You don’t do that by adding a lot of extra detail, unfortunately.
