Why do so many “butch” lesbians work in food service?

After reading the OP, I spent a few seconds trying to visualize all of the line cooks I've seen at various restaurants, and I'm realizing I've seen almost none. Are you in the restaurant industry? Or is this about fast food?

Pretty faces go to the front of house. Everyone else works back of house. There's really nothing more to it.

Restaurants generally are the lowest rung on the employment ladder, right there with retail.
Back of the house staff often is just a prison reunion.
