My father who was a police officer was part of a raid on a chinese joint. They went in freezer and skinned cats for as far as you could see.

I'd spend the money and put them through the paces. An order of chicken chow mein, pepper steak and egg rolls will let you know if they are worth further business.

My favorite Chinese restaurant in Dallas had some wicked Spicy Szechuan Beef served with those noodles that look and feel like Styrofoam. I miss going there a couple of times a year.
