It's the only line in the triangle that goes from the center to a point on the completed circle.

It must be shittily drawn to scale because I don't see how the adjacent could extend for another 11 cm.

Ok that formula makes sense, but I don't think OP used that during the interview.
I understand that the hypotenuse is the only one reaching from the center to the outside point, but how do I know that the lower corner of the triangle (the starting point of the hypotenuse) is starting in the center?

took me way too long, but:
a^2 + b^2 = c^2
(r-1)^2 + 5^2 = r^2
r^2 - 2r + 1 + 25 = r^2
r = 13
a^2 + b^2 = c^2
(r-1)^2 + 5^2 = r^2
r^2 - 2r + 1 + 25 = r^2
r = 13
