Go walk around Red Rocks
Take in a game at Coors Field
Great day hikes in Golden Gate Canyon State Park
Good beer if you're into that sort of thing
Excellent public golf courses
Take a drive up to Boulder
Air Force Academy in CO Springs is nice too
The weather is typically top notch in the summer. Hot dry days and cool nights.

Check out the state Capitol building - beautiful old building and you can pretty wander all through it on your own. There is s museum on the top floor.

You can kill a day, easy, just wandering around the frickin' airport.

Just got back from Denver last week. Here are my thoughts:
1) Great scenery. Rocky Mountains. Coors Field. Skinny people everywhere
2) Great bar/food scene. I recommend Williams & Grace HIGHLY and Whisky Argylle
3) Pedestrian friendly city. Walked around for miles and never felt like I was in a sketchy area
4) Weather is phenominal
Seriously suggest walking around and popping in different places. You will have a great time.
ETA: Large contingent of hipster, lumber sexuals (Long beards, skinny jeans, and flannel / plaid) Definitely a granola city but very fun.
