Give me a bear and a large tree and I could survive. Not by climbing up it, but by staying behind it. I could out wait the bear if my life depended on it.

Doubt it. An 800 lb grizzly is faster than you could ever hope to be

Get above knee deep in the water and humans are a lot lower on the food chain.
A shorter list would be what animals could man take with just a 3 in knife

What are the animals that could easily beat a man in hand to hand contact

Let's assume you mean "combat" not "contact."
Do you know how ill-equipped a human is to fight almost any wild animal with a 3-inch knife?
Basically any healthy male animal from about 60 pounds up and a number of them smaller will frick you up if he's angry and all you got is a 3-inch knife.
As far as "easily" - any great cat (and even a bobcat is no sure win for your knife there). Any bear. Any great ape, except maybe a Bonobo. Any crocodile or alligator (on land). Even an ostrich (a wild ostrich) is liable to make short work out of you. Wolverine and it's smaller cousin, the badger will frick you up. Any buffalo, bison or even domestic bull. Any horse. Hippo, rhino, elephant, giraffe - Africa in general will ruin your entire day if you're not prepared.
Long story short: you can defeat most rodents, a single coyote, small monkeys and, just maybe, a koala bear with your 3-inch knife.

There probably isn't a human on this planet that could beat a chimp or orangutan in a fight to the death with just a 3 inch knife

a man gives a woman 3 inches he'll be praying for the grizzly to eat him.

Truth.
The only reason we are at the top of the food chain is because of our brains. We have poor eyesight, less hearing, less strength, no claws, no thick hide, nothing. We are the absolute worst equipped animal or mammmal species on the planet when it comes to survival using only our hands.

Don't know why, but your post made me think about this.

Cassowary - one mean bird

quote:
They can grow to over six and a half feet tall, weigh well over 100 pounds, and gallop around at speeds of over thirty miles per hour – an impressive biomechanical feat for a creature with legs that might best be described as "death-cudgels with knives attached." Seriously, look at this thing. You see its feet? The middle toe on each one features a dagger-like claw that can grow up to five-inches long. And, in case you forgot what it looks like, have another look at its face.

Not so sure anymore. There's at least one out there that got decked by a dude and bounced away like a big pussy.
