Restaurants used to make cash drops daily, thousands of dollars. I don't know if it still works that way, but it used to. Not that long ago.

The gift cards is a great idea. Could you not run an online business, go around the city and buy visa gift cards in cash. Then use VPNs at places like public libraries to pay your account? Hell maybe anywhere with wifi? I’m not vpn savvy. But buying Gift cards with cash to pay yourself would be very doable right? You could set up 25-50 online accounts fairly easily to pay yourself. $500 each a month is not unreasonable.
ETA: everything depends on the amount we are talking. You could spend $25,000 to $50,000 personally easily. Then launder $25-50k.
Chances of getting caught doing under $100k if you are paying taxes properly is almost 0. It’s the people doing $100k a week at a car wash that get caught.

Anyone mention owning a driving range?
Buy a cheap plot of land somewhere not too far out of the way and set one up.
Put a coupon in the local paper for a cheap price and charge “those who don’t come with one” more. “Most people” won’t come with a coupon.

That’s an interesting one. If you can get a reasonable land cost, set up and operations are cheap. The key “inventory” is reusable (golf balls). Likely high cash usage due to the low price. Can even setup a little pro shop and bar maybe to run a little extra cash through.
Wouldn’t need a ton of employees.
Certainly a better option down south where you aren’t closed a good chunk of the year.

Right....hire a couple of teens to drive the golf ball picker upper to show gas/electrical usage.

And it's getting harder. At this point, the vast majority of coins worth more than face value have already been pulled out of circulation. I think I have one penny and two quarters right now waiting for the safe deposit box and its been a LONG time since I've come across those.

You aren’t having the IRS or fbi investigate your for under $200,000 though. Again, if we are talking $500k or $1 mil or more that’s a lot different situation and lot harder to wash the money without it being extremely obvious.
People lose $50k in small businesses all the damn time.

With the correct preparation and planning you could most likely get away with something like this - for a while - even with a perfect plan you'll eventually run into someone (ex-wife / gf / baby momma / jilted lover /angry friend / really any bad relationship) that you'll get your arse turned in.
A legit business and some standing in the community would both go a long way to helping you get away with it, but like I said before, it's not going to last forever so you better have an exit plan. These types always end up dead or in prison, it's just a matter of time. Nobody can execute a large scale criminal enterprise forever. Everyone, no matter how clever, eventually makes a mistake or just gets plain sloppy.
A legit business and some standing in the community would both go a long way to helping you get away with it, but like I said before, it's not going to last forever so you better have an exit plan. I’d start going to big baseball card shows and spend a lot of money on a mix of relatively hire dollar cards. I’d have friends and family go and have them buy as well. Follow the values of the cards and only sell the cards that appreciate wildly. Then open a shop with the money I made off of my big “hits” and my really valuable childhood collection and just start forging cash transactions.

You can pay cash for a vehicle, but a dealer is required to file Form 8300 to report cash deals over $10,000. The dealer might skip out on that requirement, but then their books could become a problem for you as they deposit the cash at the bank. And so on and so forth.
You can buy a lot of shite with cash, but now you’re creating a ton of loose ends that can and will bring down whatever laundering scheme you’re doing with the rest of the cash.
