Store clerk: “How are you today?”
Me: “Great, how are you?”
Clerk: “ I’m well, thanks for asking.”

“Thanks for asking” seems odd, does it not?

Well is an adverb.
Either
"I am doing well" or "I am good."

Most people don't give a shite about and feel superior to the clerks. Having someone actually ask the question back is nice throughout a shitty day.

I listened to a woman who was working a service desk at a big box store. She was having to listen to complaint after complaint.
Immediately after each "request", she would say, "Thank you for your concern." And proceed to try to help.
No doubt she hated saying this every time

It does seem odd, but not offensive, to be thanked for minimally exchanging pleasantries like most of us do all day, every day.
