Ham n red beans is not limited to NOLA. We used to have it in KY when the weather got cold and you needed something hot to stick to your ribs.

"Its a New Orleans thing" means cajuns don't do it. Kentucky is usually not part of the conversation.

The two things that stand out for me about Nola vs Cajun cuisine is red beans and poboys.

Cajuns are fricking retarded when it comes to those two dishes.

I cook red beans and eat red beans any day of the week.

The tradition comes from this... Many workweeks in the city were Tuesday - Saturday. Sunday was for Church and Monday was for chores. Since beans need to soak overnight and cook for several hours... it made sense to cook them on Monday.

Many people - especially in the service industry - still have Tuesday - Saturday work weeks.

Red beans are by far the most common. I've eaten white beans and rice once in a while.

I’m from Nola but have lived in Lafayette for 7 years now. I’ll agree with you that Nola can’t hold a candle to Cajun country when it comes to gumbo or jambalaya. But boiling seafood? Come on man. I hope you’re not one of those steamers.
