The two things that stand out for me about Nola vs Cajun cuisine is red beans and poboys.
Cajuns are fricking retarded when it comes to those two dishes.

I cook red beans and eat red beans any day of the week.
The tradition comes from this... Many workweeks in the city were Tuesday - Saturday. Sunday was for Church and Monday was for chores. Since beans need to soak overnight and cook for several hours... it made sense to cook them on Monday.
Many people - especially in the service industry - still have Tuesday - Saturday work weeks.

I’m from Nola but have lived in Lafayette for 7 years now. I’ll agree with you that Nola can’t hold a candle to Cajun country when it comes to gumbo or jambalaya. But boiling seafood? Come on man. I hope you’re not one of those steamers.
