Do I let it drip to prevent it from bursting? Or should I cover it up with foam pipe insulation?

Either method that you have mentioned works fine...

ETA: be sure you disconnect the water hose, as leaving it connected pulls a lot of heat out of your piping.

If you are in a slab house and spigot comes straight out of house without any real exposed pipe dont worry about it

If you are on a slab, drip the faucet farthest from where the water enters the house and call it a day.

If you are on a slab, the spigots have an air gap that prevents freezing.

What if I am in BR and house is on pier and beam? Will covering the spigots and dripping water from the faucets work?

If it gets really cold I plan to let it drip and also run it full blast for 5 minutes every couple of hours.
