In this picture, why does the bright part of the flame appear in a series of bursts rather than as just one continuous stream?

The rocket motors on these things don't work in a series of pulses I'm assuming? Is it just something to do with the speed of the camera vs the speed of the missile?

No. They're Mach Diamonds.

Basically, the exhaust flow out of the propulsion system is both supersonic and complex. If the gas leaving the nozzle is over or underexpanded (has to do with the pressure of the exhaust versus the pressure of the atmosphere), the interaction with the surrounding atmosphere sets up a series of normal standing shock waves in the exhaust flow. Where these shock waves are, the exhaust gases increase in density, so the temperature goes up. Temperature goes up, unburned things in the exhaust stream burn, and they glow, creating the shock diamonds.

Not unless they're flying in an aircraft of some sort. I believe that's a Sparrow air-to-air missile. You don't fire those at ground targets.

Nope. Shock diamonds. You can get a similar effect from afterburners on a turbine.
