Tipping is always voluntarily. It needs to be done, but done by the consumer not the merchant. She was wrong to take your money and put it in the jar.

I used to always ad the tip for pizza, I figured it would make them want to get it to me faster. Then I had an order from Papa Johns and it took nearly an hour and a half for my pizza. The guy said he got lost. I told him "It's 2014 (it was last year) how can you get lost, we had gps now for 20 years"
Counter service I always give a dollar tip, no matter what the price of food is, never give a percent unless I'm being served. Same for liquor. If I order a beer, I give you a dollar, if you make a cocktail for me, I'll give you $2. I'm not paying 20% of the drink cost for you to open it for me.

This is the way it should work...If I get a $50 bottle of wine and you bring it to the table, and pour my glasses...why should you make 4x for a $200 bottle doing the same thing.
