New Orleans Trip Suggestions

My wife and I might be taking our yearly trip to NO this year and I was wondering suggestions for where to eat, what to do, and most importantly a good place to stay.
Would like hotel that is in good part of town if any suggestions. Any historical tours and haunted tours you guys recommend?

if you like raw oysters, take a cab to cooter brown's. also have plenty of different beer on tap.

I'm an Omni guy, myself (travel to NOLA weekly for work). The Omni Royal Crescent is in a decent location, and a great price for nice rooms. The Omni Royal Orleans, however, is much bigger and nicer - smack dab in the middle of the French Quarter. If you choose either of these, let me know. I can call ahead and make sure they treat you right - maybe even a suite upgrade.
For food, my absolute favorite restaurant is K-Paul's Kitchen. Around $30 an entree, but still the best value of food you can get in the area. Palace Cafe is great, as well. If you're feeling a little more adventurous and want to try some fresh (read: raw) seafood, check out Peche. Dominica (John Besh restaurant), in the Roosevelt Hotel, has great gourmet pizzas as well.
For lunch, any restaurant around Jackson Square will treat you right. If you're feeling fancier, head to Luke (a John Besh restaurant also) for a delicious burger or daily creole specials.

Take her to Peche. They have oysters there as well an excellent menu. You can't go wrong.

Cooter Brown's is a local spot, not a tourist trap. Palace Cafe is meh. August is amazing, La Boca is a VERY underrated steakhouse, argentinian and amazing.
I know this is going to get a couple of silly comments, but why not get beignets and coffee, then catch mass at St Louis Cathedral, then hit up a traditional brunch spot in the city? That is about as authentic as you can get for an old NOLA experience.

I was born in Baton Rouge and lived in LA as a kid but haven't been to New Orleans since long ago. My wife has never been just to clarify. How long of a stay would be ideal?

Everybody on here seems to love Le Pavillon. I stayed at the Hyatt French Quarter last year and thought it was solid in terms of location and newness/cleanliness.

It's not even the best value on Chartres St in the Quarter. That would be Irene's Cuisine, Chartres & St Philip. At K-Paul's you pay the celeb chef premium. Not saying it sucks, but no way is the best value in the area...

Irene's is obviously great as well - always a line out the door, though. And it's not really a true New Orleans Creole-style restaurant.
