As some others have noted, Portugal is ideal for your situation. They have been actively recruiting your types from the USA, UK and Germany. The cost of living there will be cheap for you so your money will go far. Its a beautiful country. Below is a vid i recently watched.

I lived in Germany working for Callidus Cloud way before they were purchased by SAP. The experience was great and I think you develop a different perspective on many things when you live outside the US. I'm sure that happens wherever you choose to live.
If I were to live in western Europe I'd probably live in Spain or Portugal, but there are many different countries in eastern Europe I'd prefer that look great and less traveled.

Thailand and Panama were both fun. And enough people spoke English in both that it’s easy to get around at least in the big cities.

I actually really like Ireland and wouldn't mind it, but I like Portugal because it's warmer, nice beaches, nice weather, nice neighborhoods.
When I went to Ireland with my family a few years ago majority of them didn't like it, which was crazy to me, but to each its own.
