i don't think we see receipt in entirety to know for sure timestamp was not on receipt. you just can't see it.

I mean...I'm no receipt expert, but wouldn't there be a way to manually enter that stuff into a system, generate a receipt, and pawn it off as real?

It is almost always right next to the Date. Either on the same line or right below.
