Noted to get there early am, when the grits are fresh and not dried out or soupy (added water to soften them back up.
@ GRT, have places that serve hash browns changed suppliers? Seems they have less flavor and burn easier.

I asked if it was him and at first he said no, I made him look at me then asked again and he admitted that it was him. We'll see if he does it again
