Mine are custom made by a local butcher. Same with my sausage.

Was one of the last corner groceries left (like the Jot Em Down near the Horse Park) where they dressed your deer and such (for the city folks) and still had fried bologna sammich (with the fried egg). New owners and no butcher so not the same but you adapt.
