I've never had that. I ate lots of redfish in my day but never with skin on one side. Mahi mahi on the grill is damn good.

When it comes to sticks, I think rats on a stick are preferred


Good thing about the South is if you can bread it, deep fry it, and put it on a stick you can eat it.

You can inject mashed potatoes in just about anything. If the fish was not on the half shell you could place it on top of it.
