That's better but honestly Brie has such a mild taste it would be overpowered by the Boudin rendering it just an expensive goo. Pepper Jack is perfect. Just enough salt and kick.

You have a point. I just like the shape of brie, the wheel is good for baking. But basically do something with that priniciple.
