I used to bartend The Backstage Club at the Ft Worth Stock Show and Rodeo... I have no idea how they do it, either.
A little window into my life then...
My roommate and I used to party so hard we scared the shite out of some rodeo clowns/"bullfighters" that tried to hang with us one night. We dumped 'em off in the parking lot an hour before they were due to work a matinee that day. One of 'em was visibly ill in the ring on a couple occasions. We asked 'em if they wanted to come out with us that next night and they responded by disappearing into the crowd quickly. :shrug:

Yes - texture is the main thing but combining cooked fruit with other ingredients is just not my thing.
