A former gf used to take a whole coconut and bake it in the oven. A chore to get the hull off of it but it really tasted good. I would like to do one myself but I can't remember how long to bake it.

I do not personally dislike anyone on the board (because I don’t know them in real life) but that’s pretty sicko! I’m glad you have the pizzas and he deserves to be out $250.

I agree on the texture thing with most coconut, but shaved and toasted on a cookie iwei. They aren't large shavings but rather fine and well toasted. Has a nice crisp with a subtle chewy that hides well in the caramel.

Nurse, she had her last chemo on December 10. She’s still in the post-chemo phase where she is tired and weak. She’s down about 35 lbs and looks very gaunt at 90 lbs. My quest for 2025 is to put some fat on that girl!
I’m doing well all things considered. I’m still awaiting admission into Georgetown’s Liver Transplant Program and should find out something in early January. My MELD score is 12 which is good and would put me very low on the transplant list. I’m hoping that I can maintain my present status and avoid a transplant all together. We will see what happens. I have to believe 2025 is going to be a better year!
Time for me to get a little work done. Stay well all!
