Ugh mostly wrong . Not only are their very few simple requirements They are immanently enforceable. Worse yet, most have damage clauses for violations that make you pay your former employer's attorney fees.
Listening to know it all "internet lawyers" can result in a huge judgment against your arse.

Insist that the non-compete is for 3 years, includes “the entire states of Louisiana and Mississippi,” and make sure there is no reformation clause.

Not if they are drafted correctly. They are absolutely enforceable if so.

Employer needs to prove they actual conduct business in the listed jurisdictions.
Some judges will throw out non-competes with more than 2 years; others will just limit it to 2 years
If an employer asked about a noncompete, I would ask if they plan on guaranteeing my income and insurance for the time listed on the non compete. If you don’t want me to work for anyone else, you need to pay me for the term of your non compete regardless of how our term ends.

I see that. That is why I was asking for some attorney referrals. With OT recommendations, I am either going to start a new position or lose my house (that is where is was when I started the OP).

Had an issue with a former employer, he provided sound advice and helped me recover a significant amount of what I was owed without wasting all of it on attorney fees. I’m sure he or one of his associates could review and provide sound advice.

Can save you the money, why sign this? Are they holding your bonus or some shite.
Courts generally don’t like them so they will often redline them. You should absolutely make the territory as limited as possible and the length is generally never allowed to be more than 2 years.
Companies often make up ridiculous shite which gets thrown out but if u are leaving why sign shite. frick them but do not sign anything with a NY, NJ, Delaware or Connecticut venue selection cause. You are looking at 600-1000 dollars an hour with 25-50k retainer to do anything up here. Make sure you have Louisiana as venue choice
