Do I have to go talk to them and ask or can I just shoot a quick email? I'm assuming they just plug your name into their template and rock n roll from there. Especially at LSU where they prob do this a lot. It's for grad school. I need 3. I doubt the school will even read them.

Someone at the school will. You need to schedule a meeting and ask face-to-face. If you want you can put in the e-mail why you want the meeting and let them decide if they don't want to bother with a meeting.

Ask them after class or email them and schedule a meeting.

Yes, you should go talk to them in person like a big boy.

I'm assuming I should ask professors who I've already taken as opposed to ones I'm currently taking. Does it really matter?

Casually asking someone for a Letter of Recommendation though email is ALWAYS the way to go.

Ask personally as many people in Academia are olde skule.
If they aren't, no harm done and you'll get an immediate answer.

Ask personally. It also helps if they do research and you help volunteer in their studies by helping them.

I would ask the ones that you are more friendly with, and maybe have a better insight to who you are as a student. If the guy doesn't know much about you or like you, it will be a pretty bland letter*.

I would also why you are interested in graduate studies.

Do you even go to class enough to know your professors?

I have asked for numerous letters over the years and written several times more for grad school and jobs. If you want to be taken seriously, then give the request more thought than "shooting an email."
Typically, professors have several of the templates you mention: one for outstanding students, one for those who work hard but do not make the top cut, and a third for those who "shoot an email." The third one might get you into a non-descript grad program at a directional school.
Bottom line: this is a personal ask.

You should have been making those connections all along so that a post like this asking advice wouldn't be needed.

Do it in person.

I ain't trying to get into Harvard, bro. I simple blah blah blah letter should be just fine

I would also confirm that they are going to give you a positive recommendation as well. You shouldn't assume that just because you ask and they say yes that it will be positive.
