That's an option, but may also be cost prohibitive for the one you do end up using.
If you want to go the multiple ticket route, Southwest is the answer as described above. Assuming you plan on flying again in the next year or whatever their credit expiration is.

Good Theory, but Southwest will not let you book multiple flights to same destinations on the same day.
I tried do this for a trip under similar circumstances and they would always cancel the 1st flight.
