Key lime pie is great. It should never be green as key limes are yellow.
It's simple to make. Just get a good Conch Republic produced bottle of lime juice. Mix some of that with condensed milk and some egg yolks, then bake in a grahm cracker crust.

Honestly. If I see it on a menu I ask two questions.

1. Is it made in-house?
2. What color is it?

I'll give it a shot if the answers are Yes and anything but green. If either answer fails it's an automatic no.
