I'd do the same thing as the OP and go for more money, but I've seen employers get offended over this exact situation. I didn't necessarily agree with them tho.

The offer I received today is $20k more, less stress, home most of the time. The other company was on call 24/7/365.

Don't be a Beta and email them. Call them like a true professional and thank them for the opportunity but unfortunately a better fitting job has been offered to you. I wouldn't talk about the money unless you are trying to leverage them.

yea. this seems easy as frick. You call them and tell them that you have a better offer from another company. Thank them for the offer and if they really want you they will counter. This isn't hard at all

Rule of thumb:
Respond in the same manner your offer was presented. If it was an email shoot an email. If it was a letter, write a short letter stating your reasons for declining. If it was a phone call, call them.

its 3:16PM Friday. He is supposed to be there Monday AM. Letter wont get there in time. I'd say call or email at this point, although most managers are probably long gone by now on a Friday afternoon.

then why even fight with the other one. just take the one you want... i mean, it sounds like they would need to one up the currently accepted job by another 20k to get you to do it? they likely arent jumping by 40k

Call in sick on monday, and see how many days you can call in sick until they catch on.
