I did. Tried music. Tried grad school. Tried switching to a new career and wound up in the same ole job.
The paycut was hard but luckily my wife’s teacher salary and benefits were enough to carry us. We were never in any danger, but I definitely felt the tingle of envy watching my friends go on nice vacations, decorate their homes, and settle into their careers.
Edit - I should add that I could have gotten a different job but didn’t want to accept the paycut. I’m not sure I can say if I regret that or not but I would have taken an office job (tech writer or something) for ~$35k instead of the $54k teaching job. I can’t see myself ever working in a cubicle for a boss, so I think I made the right choice.

I gave up 40k per year to step down to a position that was m-f, 7-4. Before that I was a mid level manager pullng in 80k, but worked 3 weekends per month and 23 nights a month.Bed move I ever made, by far.

A note on Sarah Lee - those bread routes don't generate a lot. The guy I know bought a route, drives it, and bought two more and hired drivers. He does alright now.

I walked out on a job once because my boss wanted me to do something illegal. I was already considering it, everyone hated working there anyway but I had no job lined up and bills to pay.
Fortunately I got another one a month later that paid more but I didn't know it would work out well.

Quit a job to go with my supervisor at the time and start a company from the ground up. We started with zero clients and it was just us two. She’s only a couple years older than me and I didn’t know her THAT well yet, so it was risky blindly following her.
Best decision I’ve ever made. We’ve now grown exponentially to the point where we have to tell prospects no. I recently got a raise that all said and done is double where I started, and I have no intentions of slowing down. Easily the highest priority in my life behind relationships.
