I routinely go a month or so past the "best by" date. Furthest out has been 3+ months. Never had any health issues.
Taste is the same.
The only difference I've seen in using fresh eggs vs older eggs is that hard-boiled eggs tend to be more annoying to peel if they're older.

Boil them. Eggshells are easier to peel off when the eggs are out of date. Or get your SO to do it and make deviled eggs

I have consistently eaten fried/scrambled eggs that were LONG past the due date by a month or more.

side question: would this be different in Europe where they dont refrigerate/wash their eggs?

They’re eggs. Once you crack them you can smell it if they’re bad. True story: I ate 6 eggs three months past their expiration date and they were just fine.

i’m sure someone has said this already but i’m too tired to read though.
lightly place them in large bowl or pot of cold water.
if they sink you’re good.
if they float, don’t eat them.
if they’re bobbing between sink and float, well, that’s your call.
i have to do this frequently.

When I was a kid I had no idea they had dates on eggs or cheese. No green on the cheese its good to go. Who eats an entire bag of cheese within a week from opening it? Damn dates on food.

i don’t eat enough food or nearly fast enough before the best buy/expiration dates. i need to eat like 11+ eggs by sunday in fact.

Commercial eggs are housed in a climate controlled facility for 2 weeks before they are packaged and sent to the grocery (to allow the red blood dots to break down because people don't want to see that blood spot). Once packaged they are labeled with a 2 week expiration/use by date. Now with that said we keep fresh eggs on the counter (74°) for up to a month at my house before we even begin to consider throwing them out. Break one and if it smells fine it is fine to eat.
Considering commercial eggs are kept in climate controlled facility and then refrigerated they will probably last a good bit longer than ambient kept eggs.
